Potato Nachos
Serves 2-4
Time 45 minutes
Ingredients
6 potatoes
1 tsp cumin
3 tsp garlic powder
2 tsp smoky paprika
¼ cup extra virgin olive oil
Guacamole
2 medium avocados
1-2 limes
½ cup freshly chopped coriander + extra for garnish
Jalapenos, to taste
100-150g fetta
Method
Cut potatoes into eighths to create wedges. Heat oven to 200°C and line a large baking tray with greaseproof paper.
Add potatoes to the tray. Mix cumin, garlic powder, smoky paprika and sea salt in a bowl. Drizzle potatoes with extra virgin olive oil, then sprinkle with the cumin smoky paprika seasoning and toss the potatoes to coat evenly, spread out over the tray so they can crispen well whilst baking.
Cook in the oven for 30-40 minutes or until crispy. Whilst the potatoes are cooking, make the guacamole.
Mash avocados with lime juice, coriander, salt, pepper and jalapenos if desired. Once potatoes are cooked top with dollops of guacamole and crumble feta over the top.
Garnish with coriander and extra sliced jalapenos as desired and tuck in.
