Pork San Choy Bao

Serves 4

Time 20 minutes

Ingredients

300g pork mince

1 tbsp vegetable oil

1 onion, peeled and finely diced

2 garlic cloves, peeled and chopped

1 carrot, finely diced

1 tbsp grated ginger

2 tbsp oyster sauce

1 tbsp light soy sauce

1 tsp sesame oil

1 tbsp rice vinegar

4 spring onions, finely sliced

8 iceberg lettuce cups

To Serve

Coriander leaves

Lime wedges

Chilli, finely sliced

Method

Heat the oil in a pan over medium-high heat. Add the pork mince and cook for 4-5 minutes until browned, breaking it up with a spoon. Add the onion, garlic, carrot and ginger, and cook for another 2-3 minutes.

Stir in the oyster sauce, soy sauce, sesame oil and rice vinegar. Toss for 1–2 minutes until glossy and well coated, then remove from the heat and fold through the sliced spring onions.

Spoon the pork mixture into crisp lettuce cups and finish with coriander, lime and chilli if desired. Serve immediately.
