Pineapple, Coconut & Lime Muffins

Serves makes 12

Time 30 minutes

Ingredients

2 cups self-raising flour

½ cup caster sugar

Good pinch of salt

1 cup milk

2 eggs

¼ cup canola oil

1 cup fresh pineapple, diced

Zest and juice of 2 limes

½ cup desiccated coconut

Oil spray, for greasing

Method

Preheat oven to 200°C.

Line a 12-hole muffin tin with muffin cases, then spray the cases with oil spray.

In a large bowl, add the sifted flour, caster sugar and salt. Mix to combine. Add the remaining ingredients and gently mix together. Don’t overmix.

Divide the batter evenly into the muffin tins. Bake for 15 - 20 minutes or until a skewer inserted into a muffin comes out clean.

Let cool in the tin for a few minutes before removing to a wire rack to cool completely.
