Olive Oil Marinated Mozzarella Balls

Ingredients
440g cherry bocconcini
1 cup extra virgin olive oil
1 long red chilli, thinly sliced
3 cloves garlic, peeled and thinly sliced
6 sprigs thyme
Zest of 1 lemon
½ tsp sea salt flakes
Method
Drain the bocconcini and place into clear sterile glass jars. How many jars you use will depend on the size of the jars. It could be approx 2 jars or 4 small jars.
Fill the jars with the lemon zest, slices of chilli and garlic, thyme, a sprinkle of salt and then the extra virgin olive oil.
Screw the on lids, and refrigerate to marinate for at least 2 hours before using. Use within 5 days of making.
Great in salads, on cheese platters, on pizza or as an appetizer!
