Nut-Crusted Chicken Nuggets

Serves 4

Time 30 minutes

Ingredients

400g chicken breast, cut into 3cm nuggets

1 egg, beaten

240g crushed nuts

2 tbsp cornflour

1 tsp smoked paprika

Neutral oil

Sea salt and freshly ground black pepper

To Serve

Lemon wedges

Aioli

Method

Season the chicken with salt, pepper and smoked paprika. Dust lightly in cornflour, dip into the beaten egg, then press each piece firmly into crushed nuts to coat.

Heat oil in a non-stick pan over medium heat. Cook the nuggets for 3-4 minutes per side until golden, crisp and cooked through.

Serve immediately with lemon wedges and aioli, or your favourite dipping sauce.
