Next Level Scallop Potatoes

Serves 6

Time 1 hour 30 minutes

Ingredients

1kg potatoes, thinly sliced

6 cloves of garlic, peeled and finely chopped

2 x 200g bacon pan size double-smoked, diced

1 bunch of chives, finely chopped, reserve some for garnish

600ml thickened cream

2 tbsp Dijon mustard

2 tbsp chicken stock powder

2 cups gruyere cheese, grated

Salt and pepper

Method

Preheat oven to 180° C.

In a medium baking dish, place a layer of the sliced potato, and season with salt and pepper. Sprinkle over some of the garlic, bacon and chives. Repeat layers until all the potatoes, garlic, bacon and chives have been used.

Place cream into a bowl, add Dijon and chicken stock powder and whisk until combined. Pour the cream mixture over the potatoes and top with grated gruyere cheese.

Cook in the oven for 45 minutes - 1 hour or until the potatoes are soft and the top is bubbling and golden. If the cheese layer is getting too brown before the potatoes have softened, cover with foil.

Remove from the oven and let the scallop potatoes settle for at least 15 minutes before serving.

Garnish with extra chopped chives.
