Monte Cristo Toastie

Ingredients
4 slices sourdough bread
100g sliced ham
100g sliced turkey
1 cup gruyere cheese, grated
100g sliced Swiss cheese
4 eggs
¼ cup raspberry jam
Icing sugar, for dusting
¼ cup cream
100g butter, softened
Method
Place 2 slices of sourdough onto a clean board. Spread each slice with raspberry jam, add grated gruyere cheese, sliced ham, sliced turkey and Swiss cheese. Place the other 2 slices of bread on top and butter the outside of the bread.
Crack eggs into a wide mixing bowl, add cream and whisk to combine.
Heat a large frying pan over medium heat. Dip each sandwich into the egg mix, coating the top and bottom piece of bread. Let any excess egg drain off and place the sandwich into the frying pan. Repeat with the other sandwich. Cook for 3-4 mins each side until deep golden and the egg coating is fully set.
Serve dusted in icing sugar and enjoy!
