Honey & Soy Pork Ribs

Serves 4

Time 2 hours 30 minutes

Ingredients

For Ribs 

1 rack of pork ribs

1 onion, sliced 

2 garlic cloves, crushed 

1 red chill

5g pink peppercorns  

3 sprigs rosemary 

2 spring onions 

½ bunch coriander 

100ml soy sauce

1L water

For Glaze

150ml honey 

50ml gochujang  

50ml kecap manis (sweet soy sauce)

100ml soy sauce 

50ml rice vinegar

50g caster sugar

1 lime, zested and juiced 

5 spring onions, finely sliced

Toasted sesame seeds to garnish 

Method

For the pork ribs, bring all ingredients to the boil over a medium heat and reduce to a simmer. Leave simmering for 1.5 to 2 hours, until the meat is tender.

Over a medium heat bring all the glaze ingredients to heat and reduce by half.

Pour glaze over ribs and place in an air fryer. Cook at 200°C for about 8 minutes, glazing a few times throughout the cooking.
