Hedgehog Slice
Serves makes 24 pieces
Time 15 minutes plus setting time
Ingredients
250g butter, diced
1x 395g can of condensed milk
500g coconut flavoured cookies
¼ cup cocoa powder
½ cup desiccated coconut
½ cup mini marshmallows
½ cup roasted pistachios
Topping
250g milk chocolate
2 tsp olive oil
2 tbsp hundreds and thousands
Method
Grease and line a slice tin (16 cm × 26 cm).
Melt the butter and condensed milk together in a saucepan over low heat or in the microwave until smooth and well combined.
Crush the cookies into a chunky crumb using a food processor or rolling pin.
Transfer the cookie crumbs to a large mixing bowl. Add the melted butter mixture, cocoa powder, desiccated coconut, marshmallows and pistachios. Stir well to combine, then press the mixture firmly and evenly into the prepared slice tin.
Melt the milk chocolate and olive oil together in the microwave or in a heatproof bowl set over simmering water. Stir until smooth, then pour over the slice and spread evenly. Sprinkle with hundreds and thousands and refrigerate for at least 2 hours, or until set.
Slice and enjoy.
