Green Goddess Juice

Serves 1-2

Time 10 minutes

Ingredients

1 cup baby spinach leaves (or kale for a more robust flavour)

¼ cup fresh parsley 

1 green apple

2 celery stalks

½ cucumber

Juice of 1 lime or ½ lemon

1 tsp fresh ginger

½ cup frozen pineapple chunks

1 cup cold water or coconut water (adjust for desired consistency)

Ice cubes, optional

Method

Wash and chop all the produce into manageable pieces for the juicer. Feed the ingredients through your juicer, starting with the spinach and parsley for maximum extraction.

Pour the juice into glasses over ice cubes, if desired. Garnish with a slice of lime or a sprig of parsley.

Enjoy immediately!
