Greek Style Smash Tacos

Serves 2

Time 45 minutes

Ingredients

1x 400g tin lentils or 225g cooked brown lentils 

2 eggs, whisked

2 tbsp wholemeal or spelt flour 

2 tsp garlic powder 

2 tsp dried oregano 

6 small tortillas 

Extra virgin olive oil for frying 

1 cup diced cucumber 

1 cup diced tomatoes 

¼ cup finely chopped red onion 

½ cup crumbled Greek feta cheese 

Fresh mint and parsley

Sea salt and black pepper 

Tzatziki

½ cup Greek yogurt 

1 tbsp fresh mint, finely sliced 

2 tsp extra virgin olive oil 

1 tbsp lemon juice 

1 clove garlic, finely chopped 

Method

Combine lentils, eggs, flour, garlic powder, oregano and a good pinch of salt and pepper in a bowl and mix. Prep your tzatziki by adding all ingredients to a bowl, season with salt and pepper and set aside.

Heat a small frypan on medium heat, and give a drizzle of extra virgin olive oil. Add about ⅓ cup of the lentil mix into the pan, then lay the small tortilla over the top of the mix and gently press the mix out until you can see about 1cm around the edge of the tortilla remaining. Cook for about 3 minutes, then flip and heat an extra minute with the tortilla directly on the heat.

Transfer to a plate to stay warm and repeat with remaining mixture. Once all are cooked, spread tzatziki over the lentil smash, followed by the diced cucumber, tomatoes, onion, feta and finish with some sprigs of fresh mint and parsley. Fold and enjoy like a taco.
