Grandma’s Tuna Curry

Serves 4

Time 45 minutes

Ingredients

1 red onion, chopped

1 large can of tuna in olive oil 

2 stems curry leaves

1 tsp mustard seeds

2 tbsp olive oil 

2 cloves of garlic, finely chopped

1 inch ginger, finely chopped

1 tsp ground turmeric 

2 tsp garam masala

1 potato, thinly sliced into half moons

Roti or rice, to serve

Method

Heat olive oil in a pot. Initially fry off the mustard seeds and curry leaves. Then add the onion and ensure softened. 

After 3-4 minutes add the potato and ensure frequently stirred so does not stick – fry these off so softened for 4-5 minutes. 

Next add ginger and garlic and combine. Then add the tuna – drained and break up with a wooden spoon. Add salt and pepper and taste, also add chilli flakes as desired. 

Add turmeric and garam masala and cook for 10-12 minutes – the main aim is to ensure the potato is soft!

Serve with rice or in a roti.
