Garlic Chilli Prawn Homemade Pizza

Ingredients
Pizza Base
1 cup bread & pizza flour
½ cup Greek yoghurt
1 tbsp extra virgin olive oil
Pinch salt
Topping
12-14 green prawns, peeled and tails removed
3 cloves garlic, crushed
1 tsp extra virgin olive oil
1 tbsp tomato paste
½ tsp dried oregano
½ cup shredded pizza cheese or baby bocconcini (as desired)
1 heirloom tomato
½ cup fresh basil leaves
Fresh or dried chilli
1 cup fresh rocket
Lemon wedges, to serve
Method
Make the pizza base first place the pizza flour into a bowl, then add the yoghurt, oil and salt and bring together with a fork until it forms a loose ball.
Flour your work surface and place the ball on the bench and knead for 8-10 minutes. Roll it into a smooth ball, and set aside minutes whilst you prep the rest of the ingredients.
Heat the oven to 240°C fan force. Prepare the prawns by tossing prawns, garlic and extra virgin olive oil in a bowl. Slice the tomato about 5mm thick.
Once the dough has rested, flour your work surface and rolling pin, then roll out until about 3 mm thick. Transfer to a large baking tray and spread with tomato paste, then sprinkle with dried oregano.
Sprinkle the base with pizza cheese or tear the baby bocconcini around the pizza. Arrange the tomato around the pizza and evenly spread the garlic prawns on top. Make sure you have all the delicious garlic on the prawns - scoop them from the bowl onto the prawns if you don’t.
Bake in the oven for 10-15 minutes. Once cooked, sprinkle with fresh chilli and arrange rocket either in the middle of the pizza or around it. Give a big squeeze of lemon over the prawns, slice and enjoy.
