Date Bark Treats
Serves makes 6-8 pieces
Time 5 minutes plus set time
Ingredients
150g dark chocolate (min 70% cacao)
½ tbsp extra virgin olive oil
2–3 corn thins (Multigrain)
6–8 dates, chopped
2 tbsp pumpkin seeds
2 tbsp pistachios, roughly chopped
Pinch sea salt flakes (optional but tastes amazing on top)
Method
Place dark chocolate in a glass bowl over a pan of simmering water and stir until melted (alternatively microwave in 20–30 second bursts, stirring until smooth). Stir in the EVOO for creaminess and shine.
Lightly crumble the corn thins into bite-size shards — you want texture, not crumbs. Have pumpkin seeds, pistachios and chopped dates ready.
Spread the melted chocolate onto a baking-paper-lined tray (about ½ cm thick). Scatter evenly with the crumbled Corn Thins, dates, pumpkin seeds and pistachios. Press very gently so everything sticks. Sprinkle with sea salt flakes if using.
Refrigerate for 20–30 minutes until set. Break into rustic shards.
