Creamy Matcha Chia Mousse

Serves 2

Time 10 minutes plus chilling

Ingredients

1 cup milk (dairy or soy for protein)

½ cup Greek yoghurt

1 tbsp matcha powder

1 small handful baby spinach leaves

2-3 tsp honey or maple syrup (to taste)

1 tsp vanilla extract

4 tbsp chia seeds

To Serve

Fresh fruit (kiwi, mango, or berries work beautifully - I like the idea of using kiwi to keep it all green)

A handful of chopped pistachios (or any other nut)

Optional drizzle of honey or extra yoghurt

Method

Add the milk, Greek yoghurt, matcha powder, spinach, honey (or maple syrup), vanilla, and chia seeds to your blender. Blend on high for 30-45 seconds until smooth and vibrantly green.

Pour into a bowl or container, cover, and refrigerate for at least 2–3 hours, or overnight. The mixture will thicken into a luscious mousse-like pudding.

Spoon into glasses or bowls. Top with fresh fruit and a sprinkle of chopped nuts. Finish with a drizzle of honey or extra yoghurt if desired.
