Chicken Waldorf Toastie

Serves makes4 toasties

Time 20 minutes

Ingredients

For the Waldorf Mix

2 cups leftover roast chicken, shredded

1 apple, cored and cut into ½ cm cubes

¼ cup roasted walnuts, chopped

1 celery stick, finely diced

¼ cup raisins

2 tbsp chives, finely chopped

1 tbsp tarragon, finely chopped

½ cup whole egg mayonnaise

½ cup crème fraîche

Salt and pepper to taste


Other

8 slices of sourdough bread

100g butter, softened

2 cups vintage cheddar, grated

1 cup rocket leaves

Method

Make the Waldorf mix by combining all ingredients in a bowl and stirring until well blended.

Preheat the sandwich press.

Place 4 bread slices on a board. Top each with half the grated cheese. Spoon the Waldorf mix evenly over the cheese, finish with rocket leaves, and sprinkle over the remaining cheese. Place the remaining bread slices on top, butter-side up. Cook in the sandwich press until golden and crispy. Cut in half and serve.
