Chicken Souvlaki Bowls with Garlic Potatoes

Ingredients
Chicken Skewers
3 chicken breasts (approx 800g)
4 tbsp extra virgin olive oil
Juice of 1 lemon, approx 3 tbsp
½ tsp lemon zest
1 clove garlic, crushed
1 tbsp dried oregano
1 tsp sweet paprika
Garlic Potatoes
4 medium potatoes (600g), cut into wedges
3-4 cloves garlic, smashed
¼ cup extra virgin olive oil
Salt and pepper
To Serve
200g cherry tomatoes, quartered
3 cups finely shredded iceberg lettuce
2 Lebanese cucumbers, diced
4 Greek pita bread
1 cup good quality tzatziki
Method
Marinate the chicken first. Cut chicken into 4 cm cubes and place in a container. Whisk together extra virgin olive oil, lemon juice and zest, garlic, oregano, sweet paprika, salt and pepper in a small bowl, then pour over the chicken and toss to coat. Marinate for at least 15 minutes or overnight if you have time.
Thread onto 8 skewers just prior to cooking. Heat oven to 200°C and toss the potatoes onto a lined baking tray with garlic, extra virgin olive oil, smashed garlic, salt and pepper. Cook in the oven for 40 minutes.
Cook the chicken skewers for 1-2 minutes on each side on a grill plate, until lightly golden. When all ingredients are cooked and ready to serve, warm the pita bread and place it as the base on each bowl.
Top with lettuce, tomatoes, and cucumber, then add the chicken skewers and potatoes. Dollop good quality Tzatziki on top of each of the chicken skewers and enjoy.
