Cherry Hazelnut Brownies

Time 45 minutes

Ingredients

⅓ cup extra virgin olive oil

¼ cup raw cacao powder

½ cup coconut sugar

3 free-range eggs

2 tsp vanilla extract

1½ cups hazelnut meal

½ cup flaked coconut + extra for the top

¾ cup chopped dark chocolate

¾ cup frozen cherries 

Method

Heat oven to 170°C and line a 15 x 22 cm (or thereabouts) baking or loaf tin with greaseproof paper.

In a bowl whisk together oil with cacao, coconut sugar, eggs and vanilla until creamy. Add hazelnut meal, flaked coconut and dark chocolate pieces and mix.

Fold frozen cherries through the batter. Pour into a lined tin or dish, press extra flaked coconut around the brownie mix and then bake in the middle of the oven for 30 minutes.

Cool in the tin completely for around 30-40 minutes, then slice and enjoy.
