Caldo Verde Portuguese Soup
Serves 4
Time 30 minutes
Ingredients
3 chorizo sausages, sliced
200g bacon, diced
3 large potatoes, chopped
1 onion, chopped
8 cloves garlic, sliced
3L chicken stock
1 bunch kale, roughly chopped
Salt and pepper to taste
Olive oil
Method
Heat oil in a large frying pan over medium-high heat. Add chorizo and bacon and fry for a few minutes until crispy. Use a slotted spoon to remove the chorizo to a separate bowl. Set aside for later, leaving chorizo oil in the pan.
With the pan still on medium-high heat, to the chorizo oil, add the onion, potatoes and garlic. Cook for 3-4 minutes. Add chicken stock and simmer until the potatoes are soft. Blend with a stick blender. Add the chorizo back in, along with the chopped kale. Add salt and pepper to taste and serve.
