Brown Butter & Parmesan Popcorn

Ingredients

50g salted butter

100g popcorn kernels

30g parmesan, finely grated

½ tsp sea salt (adjust to taste)

¼ tsp freshly cracked black pepper (optional)

Method

In a small saucepan, melt the butter over medium heat. Continue cooking until it turns golden brown and smells nutty, about 3–5 minutes. Remove from heat and set aside.

Heat a large, heavy-based pot with a lid over medium heat. Add the popcorn kernels and cover with the lid. Shake the pot occasionally to ensure even popping. Once the popping slows to 2–3 seconds between pops, remove from heat.

Transfer the freshly popped popcorn to a large bowl. Drizzle over the browned butter and toss to coat evenly. Sprinkle with parmesan, sea salt, and black pepper if using, and toss again.

Serve immediately for the best texture and flavour.
