Brie & Pear Puff Pastry Tart

Serves 4

Time 45 minutes

Ingredients

3 tbsp cream 

1 egg

2 egg yolks

1 pear, peeled and diced

200g double brie

½ tsp freshly cracked black pepper

½ bunch parsley 

1 stem spring onion 

1 bunch basil, roughly torn 

½ bunch chives, finely chopped 

1 tbsp extra virgin olive oil 

2 sprigs rosemary 

1 tbsp sesame seeds 

3 tbsp honey 

1 sheet of puff pastry

Extra virgin olive oil

Salt and pepper

Method

Preheat the oven to 220°C and place a rack in the lower third of the oven.

Cut the brie in half, through the centre. Cut 1 half into pieces. 

In a bowl add pear, brie pieces, herbs, 1 egg, cream, a pinch of salt and pepper, and extra virgin olive oil. Stir to distribute the herbs through the mixture. 

Place 1 sheet of pastry on a baking tray covered with baking paper. Brush the sides of the pastry with egg yolk. Take another sheet of pastry and cut 4 cm strips for the border. Brush with egg yolk and layer the pastry strips on the sides of the main sheet to create a thick border (5-6 layers).

Pour the pear and brie mixture into the centre of the pastry. Top with the brie and drizzle over the honey, extra virgin olive oil, a sprinkle of sesame seeds, black pepper and a sprig of rosemary. 

Bake for 25-30 minutes until the pastry and brie are golden brown. Serve and enjoy!
