Beef Honey-Glazed Skewers

Serves 4

Time 30 minutes

Ingredients

400g beef rump, cut into thin slices

2 spring onions, cut into 3cm batons

8 wooden skewers, soaked in water

Glaze

3 tbsp honey

2 tbsp light soy sauce

1 tbsp mirin (or 1 tbsp water + extra ½ tsp honey if avoiding alcohol)

1 garlic clove, peeled and chopped

1 tsp grated ginger

1 tsp sesame oil

To Finish

1 tbsp toasted sesame seeds

2 spring onions, finely sliced

Method

Whisk together the honey, soy, mirin, garlic, ginger and sesame oil to form the glaze. Set aside.

Thread the beef slices and spring onion pieces alternately onto the soaked skewers. Lightly season with sea salt and pepper.

Heat a grill pan or barbecue to medium-high heat. Brush the beef skewers lightly with the glaze and place onto the grill. Cook for 2-3 minutes each side, brushing with more glaze as they cook, until glossy, caramelised and just cooked through.

Once cooked, brush with a final layer of the warm honey glaze for shine and flavour. Finished with sesame seeds and spring onion.
