Ballarat Baked Beans

Serves 6

Time 8 hours plus overnight soaking

Ingredients

2 cups dried white beans

25g butter


2 chorizo, diced


250g bacon, diced


1 large brown onion, diced

1 red capsicum, diced


4 cloves of black garlic, chopped


2 × 400g cans of diced tomatoes

¼ cup brown sugar

2 tbsp maple syrup

¼ cup smoky BBQ sauce

2 tbsp Worcestershire sauce

¼ tsp liquid smoke

Pinch of salt and pepper

To Serve

½ cup parsley, chopped


Crusty bread

Method

Place beans in a large bowl. Cover with water and soak overnight. 

Drain and add to the slow cooker along with all other ingredients. Stir to mix. Cook on low for 8 hours. 

Serve topped with parsley and bread to dip.
