Apple Kohlrabi Salad with Baked Barramundi

Serves 4

Ingredients

1 kohlrabi 

2 apples 

4 tbsp tarragon or mint, fresh and finely sliced  

1 lemon, juiced 

2 tsp apple cider vinegar 

1 tbsp extra virgin olive oil 

60g gouda or parmesan 

3 tbsp almonds, toasted 

Sea salt and black pepper

Method

Preheat the oven to 200°C.

Place the barramundi fillets skin side up on a lined baking tray. Season with salt, pepper, lemon juice and butter, and cook in the oven for 6 minutes or until cooked through.  

Trim the kohlrabi and finely shave both kohlrabi and apple (I used a mandolin), and place in a bowl. 

Add the finely sliced tarragon or mint and toss with lemon juice, apple cider vinegar and extra virgin olive oil. 

Finely shave the gouda or parmesan and spread through the apple and kohlrabi as you arrange it onto a serving platter. 

Roughly chop the almonds and sprinkle over the top. Season with salt and pepper and serve with baked barramundi.
