Zhong Shui Jiao (Dumplings with Red Oil)

Ingredients

Chilli Sauce
¼ cup AYAM soy sauce
1 knob ginger, grated
1 clove garlic, grated
¼ cup vinegar
4 tsp AYAM sesame oil
½ bunch coriander, chopped
½ bunch chives, chopped
2 tbsp sugar
2 tbsp sesame seeds
¼ cup chilli oil

Pork Dumplings
2 packages round dumpling wrappers
200g minced pork
1 clove garlic, grated
1 small knob ginger, grated
4 tsp AYAM sesame oil
2 tbsp AYAM soy sauce
½ bunch coriander, chopped
½ bunch chives, chopped
Salt

Stock
2L chicken stock
1 cinnamon stick
1 star anise

Method

In a small bowl, combine sauce ingredients and set aside. Boil the chicken stock with the cinnamon and star anise.

In a large bowl, combine the filling ingredients and spoon a small amount into the centre of the dumpling wrappers. Wet the edges with a little water and fold into semicircles. Boil for 1 ½ -2 minutes, transfer to a bowl, ladle hot stock over the top and spoon over chilli sauce.
