Young Fresh Coconut and Prawn Salad

Ingredients


 

Serves: 2-4, Prep: 15 minutes,

Ingredients:

1 cup coconut flesh, shredded
12 cooked king prawns, peels, leave tails on  
2 Lebanese cucumber, julienned
1/2 cup snowpeas, julienned
1/2 cup beansprouts
1/4 cup coriander, finely chopped

1/4 cup Thai basil, finely chopped

1/4 cup mint, finely chopped
1 long green, seeds removed, sliced

1 long red, seeds removed, sliced

Dressing
1 green chilli, finely chopped

2 tbsp. coconut water
1 lemongrass, outer layers discarded, root finely chopped
Small knob of ginger, finely chopped
Juice of 2 limes
1/2 tsp. of honey

4 tbsp. extra virgin olive oil  


Method

Method:

In small bowl, whisk together all ingredients for dressing. Set aside.

Combine all ingredients for salad in another large bowl.

Dress the salad and toss well to combine.

Serve.
