½ cup walnuts, chopped
2 ripe bananas, mashed
½ cup natural yoghurt
½ cup natvia
½ cup olive oil
1 tbsp baking soda
1½ cups unbleached flour, sifted
½ tsp sea salt
Preheat the oven to 180°C. Grease 9x5x3 loaf pan.
In a large mixing bowl, combine yoghurt and banana with a bamix or wooden spoon. Add olive oil, natvia and eggs and stir well.
In another bowl, sift together flour, salt and baking soda.
Add dry ingredients to wet ingredients and mix until smooth batter forms.
Stir through chopped walnuts.
Fill the loaf pan and bake for 45 minutes to 1 hour or until golden brown and cooked through.
Leave to cool and serve with yoghurt.
