1 can navy beans, drained
½ cup raw, unsalted pistachios, roughly chopped
½ cup fresh mint leaves
2 tsp lemon zest
1/3 cup soy milk
1 tsp sea salt
Puree all ingredients together until smooth. Serve with crackers, raw carrots or as a spread on wraps.
