Watermelon and Prawn Salad with Chilli Dressing

Serves 2-4
Time 40 minutes

Ingredients

Prawns
500g prawns, de-shelled
Squeeze of lime
Pinch of chilli flakes

Salad
1 ½ cups watermelon cubes, skin cut off
¼ cup coconut flakes
¼ cup chopped mint leaves
1 small red onion, finely sliced
1 avocado, skin and pip removed, diced

Dressing
1 tbsp olive oil
1 lime, juice and zest
1 long red chilli, sliced finely
1 clove garlic, crushed
1 tbsp olive oil
pinch salt
1 tsp honey
2 tsp fish sauce

Method

For the dressing, whisk together all ingredients, set aside.

Marinate prawns for 20-30 minutes prior to cooking. Heat oil in griddle pan or BBQ and char-grill prawns each side until cooked.

For the salad, combine all ingredients in a bowl, gently toss.

Assemble by placing a serving of salad on each plate, top with prawns and drizzle with salad dressing.
