Ingredients
Fritters
1-2 tbsp coconut oil
2 cups fresh peas or frozen, cooked
2 shallots, finely chopped
1 tbsp coriander, finely chopped
⅓ cup buckwheat flour
2 tbsp ricotta cheese
2 large eggs
1 garlic clove, crushed
2 tsp wasabi paste
To serve
2 eggs per person
Handful coriander leaves
Sliced avocado
Lime
Method
In a large bowl mix together peas, shallots, garlic, eggs, flour, ricotta and wasabi.
Heat a large frying pan to a medium heat, add coconut oil. Drop spoonfuls of mixture into the pan, spacing them apart from each other and cook until golden brown on each side.
Meanwhile poach or boil eggs. Serve the pea fritters with poached eggs, a sprinkle of coriander leaves, sliced avocado and a squeeze of lime.
