Walnut Shortbread Biscuits


125g Butter
¾ cup castor sugar
½ cup walnuts
1 ¼ cups plain flour
¼ cup corn flour
1 egg
1 tbls honey, warm
¼ tspn vanilla bean
1 tab orange water
extra walnuts
icing sugar


Place walnuts in a food processor and blitz until a rough crumb forms. Set aside.
Cream butter, sugar & vanilla bean in the food processor.
While the machine is still going, add the egg. Then pour in corn, plain flour and walnuts.
Transfer dough to a big mixing bowl.
Stir in honey & orange water.
Roll up mixture in baking paper to form a log, twisting sides to secure.
Leave in the fridge for at least 20 minutes to firm up.
Cut into 1cm slices and place on a lightly greased baking tray.
Press a walnut into the top of each biscuit.
Cook for 12 minutes in a preheated oven at 165 C.
Dust with icing sugar to serve.
