100g wagyu beef sirloin,
Salt and pepper
½ clove garlic, minced
½ cup soy sauce
1 tsp sesame oil
¼ cup mirin
½ cup cooking sake
½ tsp wasabi
2 tbsp brown miso paste
cayenne pepper to taste
sesame seeds, toasted
serve with pickled ginger, snow pea shoots, chives, crispy fried seaweed, sesame seeds
Season the beef on all sides with salt and pepper.
In a pan, on a medium to high heat, sear the wagu beef on all sides and remove from the pan so it doesn’t cook through.
In a mixing bowl combine all of the marinade ingredients.
Once the wagu in seared, place it in a large bowl and pour the marinade over it until about half of the meat is covered, and allow it to sit for 15 minutes. Then turn and repeat on all four sides for 15 minutes each side.
Carefully slice the meat with a sharp knife into thin slices.
Garnish with pickled ginger, snow pea shoots, chives, crispy fried seaweed, sesame seeds.
