Ingredients
2 large tomatoes, chopped
1 Lebanese cucumber, chopped
1 jalapeno, deseeded
Juice of 1 lemon
Juice of 1 lime
1 tsp Worcestershire sauce
1 tbsp hot sauce (optional)
Pinch cayenne pepper
Handful coriander leaves
1-2 sticks celery
½ tsp horseradish
To Serve:
Ice cubes
Salt, for rim
2 eggs, hardboiled
2 slices bread, toasted
Olives, on a skewer,
Celery stalk
Lemon wedges
Method
Blend tomatoes, cucumber, jalapeno, lemon and lime juice, Worcestershire sauce, hot sauce and cayenne pepper until combined. Add the coriander, celery, horseradish and blitz again until smooth.
Add some ice cubes to two salt-rimmed tall glasses. Pour contents of the blender over the ice. Stir.
Toast the bread and cut into triangles.
Garnish with egg, toast, celery, olives, celery and lemon wedges.
