Vegan Tiramisu

Serves 2
Time 20 minutes + 2 hours setting time

Ingredients

For the crust

1 cup pitted dates

¼  cup almond meal

1 tbsp coconut cream 

1 tbsp espresso 

1 tbsp maple syrup

1 tbsp cacao powder

 

For the top layer 

1½ cup of soaked cashews, soaked overnight

1 cup of pitted dates

½ cup almond meal

1 tbsp maple syrup

1 tbsp vanilla bean paste

¼ cup chocolate chips

1 tsp espresso 

2 tbsp almond milk

Method

Place crust ingredients into a food processor and pulse until combined then press evenly into the bottom of a glass. 

Place top layer ingredients into the food processor and pulse until smooth and combined. Be sure to add the almond milk gradually as you may need to adjust the quantity slightly to ensure you have a smooth filling. 

Layer top ingredients into the glasses, dust with cacao powder and place in the fridge to set for 2 hours. 

Place into the fridge or freezer until firm.
