2 sweet potato, peeled, diced (about 4 cups)
1 tbsp chia seeds
3 tbsp water
1 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
2 tsp dried oregano
Salt and pepper
1 cup rice flour
¼ cup almond meal
Preheat oven to 180°C. Line a pizza pan with baking paper.
In small bowl mix chia seeds and water to make a chia egg. Let sit for 10 minutes.
Boil or steam the sweet potato for 30 minutes or until tender. Place into a large bowl with the olive oil, apple cider vinegar, dried oregano and the chia egg. Mash the sweet potato together with everything until smooth, and season with salt and pepper. Add the rice flour and almond meal and stir well until a smooth dough forms.
Place the dough on the lined pizza pan and spread out evenly with a spatula. Bake for 20-30 minutes or until golden. Let cool.
Spread the pizza base with some tomato passata then add your desired toppings. Place under the grill for 5-10 minutes until the cheese has melted. Slice and serve.
