Vegan Mince Spaghetti Bolognese

Serves 4
Time 30 minutes


2 tbsp extra virgin olive oil

300g vegan mince 

1 red onion, diced 

2 garlic cloves, microplaned 

2 cups mushrooms, diced

1 green capsicum, finely diced

1 carrot, finely diced 

2 cups tomato passata

1 tbsp tomato puree

1 pack spaghetti 

1 tsp dried oregano 

1 tsp dried thyme

Salt & pepper


1 block vegan parmesan, grated

1 bunch fresh basil


In a pot of salted water cook pasta on stovetop to packet instructions. 

Sauté onion and garlic in a large pan with olive oil. Add the vegan mince to the pan with mushrooms, capsicum and carrot and cook for 10 mins.

Add tomato passata and puree, broth, oregano, thyme, salt and pepper.

Sprinkle with vegan parmesan and fresh basil.
