Vegan Coffee Chilli Con Carne

Serves 4-6
Time 45 minutes


1 tbsp olive oil
1 x 400g can red kidney beans, drained
1 onion, finely sliced
½ cup brewed coffee
1 red capsicum, finely sliced
2 garlic cloves, crushed
1 x 400g can tomatoes, diced
2 tsp cumin, ground
2 tsp smoked paprika
2 tsp coriander, ground
1 red chilli, sliced finely
1 pinch cayenne pepper
1 pinch cinnamon
250-500mL vegetable stock
1 bunch coriander, finely chopped
1 avocado, diced


Heat oil in a frying pan, Add onion to the pan, cook for 1-2 minutes, add garlic and capsicum, cook for 2-3 minutes. Add cumin, paprika, coriander, chilli and cayenne pepper, stir well.

Add tomatoes, coffee and enough stock to cover, cover with lid and simmer for 20-30 minutes. Add beans to the pan/pot and let warm through for 5-10 minutes.

Spoon into bowls, top with diced avocado and coriander.
