Vegan Cashew Cheese

Serves 1 cup
Time 15 minutes + cooling time


1 ½ cups unsalted cashews, soaked overnight
½ cup water
3 tbsp nutritional yeast
1 tbsp apple cider vinegar
1 lemon, juice
½ tsp garlic powder
Salt & pepper

To serve
Pea shoots
Bean shoots
Salt & pepper


Add cashews, water, nutritional yeast, apple cider vinegar, garlic powder, salt and pepper to a blender, blend until everything is smooth and combined. Add a little more water if it’s too thick.
Pour into a bowl or container and refrigerate until cool and firm.
Serve with a bagel topped with pea and bean shoots and a pinch of salt and cracked black pepper.
