Vanilla Rubbed Pork Fillet with Peach and Almond Salad

Time 20 minutes


500g pork fillet
1 vanilla bean, scraped
1-2 tsp. extra virgin olive oil
salt and pepper

Peach and Almond Salad
2 ripe peaches, diced
½ Spanish onion, diced finely
1 cup rocket leaves
¼ cup chopped almonds
1 lemon juiced
1 tbsp extra virgin olive oil


Place pork fillet in a dish and rub with ground up vanilla bean, salt, pepper and olive oil. Heat oil in fry pan and pan-fry pork fillet, 4 – 5 minutes each side until cooked through. Rest for half the cooking time.

Meanwhile in a bowl combine the salad ingredients,  mix well. Serve the pork slice on a bed of the peach and almond salad.
