Vanilla Quinoa Baked Pudding


1 cup quinoa
3 cups whole milk (works well with soy or nut milk for a vegan version)
1 vanilla bean pod or 2 tablespoons vanilla extract
1/4 cup maple syrup


Pre-heat the oven to 180C. In a saucepan mix milk, vanilla, and maple syrup, and quinoa bring to the simmer. Spoon the mixture into two small ramekins and place on a baking tray filled with 3cm water. Place into the oven for 15-20minutes.

Once thickened, remove from oven and serve warm top with your choice of delicious tidbits such as berries, dried fruit, nuts, nutmeg, brown sugar, etc.
