Vanilla Quinoa Baked Pudding

Time 30 minutes


1 cup quinoa
3 cups coconut milk
1 vanilla bean pod or 2 tablespoons vanilla extract
2 tbsp maple syrup

Nut Berry Salsa
1 punnet blueberries, halved
1 bunch mint, chopped
½ cup yoghurt (or coconut yoghurt)
¼ cup pistachios, chopped
¼ cup hazelnuts, chopped


Pre-heat the oven to 180C.

In a saucepan mix milk, vanilla, and maple syrup, and quinoa bring to the simmer for 5 -7 minutes. Spoon the mixture into two small ramekins and place on a baking tray filled with water, into the oven for 10 – 12 minutes.

In a small bowl, combine salsa ingredients and serve on top of warm pudding.
