Ultimate Vego Green Pasta

250g dried green pea penne

½ cup broad beans

½ cup peas

1 cup baby spinach

½ cup kale, chopped finely

1 bunch broccolini, chopped finely

½ cup green beans, chopped

½ cup dill, chopped

½ cup flat-leaf parsley, chopped

2 tbsp lemon thyme

1 garlic clove, sliced thinly

1 green chilli, chopped

1 lemon, zested

¼ cup extra virgin olive oil

150g ricotta salata (dried ricotta)

Salt & pepper


Cook pasta as per packet directions.

When pasta is almost al dente add peas, beans, broccolini and kale. Cook for 2 minutes or until tender.

Heat in a pan olive oil, garlic, chilli, lemon zest & lemon thyme.

Strain pasta and green veggies and add to the pan along with spinach.

Add salt and pepper to taste.

Take off heat and mix parsley & dill into pasta.

Serve and garnish with ricotta salata over the top.
