Tzatziki Dip Pizza

Serves 2-4
Time 10 minutes


1½ cups Greek yoghurt
1 cucumber, grated
2 cloves garlic, grated
1 tbsp fresh dill, diced
Juice of ½ a lemon
2 tsp white balsamic vinegar
¼ cup extra virgin olive oil
1 tbsp dill, finely chopped
Salt and pepper, to taste
2 pita bread
Pitted kalamata olives, to serve
Sliced cucumber, to serve


Grate cucumber and squeeze out any excess liquid. Add to a large bowl and stir together with the garlic, Greek yoghurt, lemon juice, white balsamic vinegar, olive oil and dill and season well with salt and pepper.


Heat the pita bread in a grill pan over medium-high heat. Spoon the tzatkiki over the top, then top with sliced cucumber and olives.
