1 packet (250 grams) of kataifi
200 g feta cheese
100 g kasseri, grated
100 g halloumi, grated
¼ cup fresh cream
¼ cup of milk
75 g butter
1 bunch chives, chopped
1 bunch dill, finely chopped
salt & pepper
Crumble feta and mix with other grated cheese into a large mixing bowl.
Stir through chives and dill. Set aside.
Separate katafi by pulling it with your fingers until it becomes light and fluffy.
Lay it on your working surface and put one tablespoon of filling on one end, then roll into a cylinder.
Put it in a buttered baking dish.
Melt the butter and cover with butter.
Whisk the eggs, add cream, milk, salt and pepper
Pour over the kataifi with a spoon making sure that all the pieces are wet.
Leave for at least one hour to soak.
Preheat oven at 180°C and bake for about 30 – 35 minutes or until golden brown on top.
