Turkey Tacos

Serves 2
Time 30 minutes


250g minced turkey
150ml passata
8 – 6 corn tortillas
1 red onion, chopped
3 cloves garlic, chopped
1 chilli, deseeded and halved
½ red capsicum, diced
1 tbsp cumin
1 bunch coriander, chopped
1 cup cooked beans

Salsa ingredients
1 tomato, diced
¼ cucumber, diced
1 avocado, diced
1 green chilli, deseeded, finely chopped
¼ cup chives
¼ cup coriander
Lemon and juice juice
Extra virgin olive oil
Salt and pepper


In a hot pan, sweat the red onion, garlic, red capsicum and chilli until softened.

Add turkey mince to the pan, season with salt and stir. Mix in the cumin, coriander, passata and beans. Simmer the turkey mixture on a low heat for 20 mins.

In a separate bowl mix together of all of the salsa ingredients.

To assemble the tacos, heat the tacos briefly, add some turkey bean mixture to the centre of it and top with salsa and a squeeze of lime juice. Roll it up and eat while warm.
