Turkey and Bulgur “Falafels”

Ingredients

Falafel
500g turkey mince
1 tsp cumin ground
1 tsp coriander ground
½ tsp chilli flakes
pinch salt
1 tbsp coriander, chopped
1 tbsp parsley, chopped
1 tbsp dill, chopped
1 onion, chopped fine
½ cup cooked coarse bulgur
¼ cup fine bulgur
olive oil for cooking

Yoghurt Salsa
cucumber, diced
tomatoes, diced
coriander, chopped
spring onion, chopped
yoghurt
salt
pepper


lettuce, chopped
pita

Method

Combine all of the falafel ingredients. Portion the mixture into little balls or patties.

Shallow fry in a pan on a low heat until cooked through.

Combine all of the salad ingredients.

Open the pita, add the lettuce, salad and falafels, wrap and devour.
