Tuna, Cucumber & Mint Salad

Serves 2
Time 15 minutes


2 x 95g cans garlic infused tuna in oil

1 punnet cherry tomatoes, halved

½ red onion, sliced

3 baby cucumbers, roughly chopped

1 bunch mint, leaves picked and torn 

1 bunch chives, chopped

1 lemon, juice 

2 tbsp extra virgin olive oil

Salt & pepper

¼ cup pine nuts

100g feta, crumbled 

20g croutons, roughly chopped 

1 stem basil


Add all of the ingredients for the salad to a large bowl. 

Gently toss all of the contents of the bowl to ensure everything is lightly dressed.

Serve immediately.
