Trio of Frittatas

12 large eggs
¼ cup milk of choice
Salt & pepper
1 bag raw spinach, chopped
1 block feta, cubed

1 block soft goats cheese
1 pack pine nuts, toasted

1 pot sour cream
1 green jalapeños, diced 

1 pot cream cheese
1 bunch chives, sliced


Preheat the oven to 180°C.
In a large bowl whisk eggs, milk, spinach, feta, salt and pepper. Pour egg mix into a lined baking tray. Bake for 20-25 minutes or until the frittata is cooked through.
Remove from the oven and allow frittata to cool before cutting it into bite-sized squares. To make the frittatas neater you can trim the edges.
Top one third of the squares with goats cheese and pine nuts, one third with sour cream and jalapeños and the final third with cream cheese and chives.
