3 cups watermelon, roughly chopped
1 cup perino tomato, roughly chopped
1-2 tsp lime zest
1 squeeze lime juice
Process all ingredients in a food processor until smooth, taste for sweetness. Pour mixture into a baking dish and place in the freezer for 30 minutes.
Remove from the freezer and using a fork, scrape the mixture into ice crystals. Return to the freezer and continue the scraping process over 30mins for the next 2-3 hours. Once the mixture is frozen, fluff with a fork and let set for an extra 30 minutes.
When ready to serve the granita should look fluffy and ‘dry.’ Spoon mixture into iced glasses.
