Ingredients
3 truss tomatoes, diced
1 tbsp. extra virgin olive oil
1 ½ shallot, finely diced
1 green chilli, deseeded, finely diced
1 garlic clove, minced
1 tbsp. sesame seeds
2 tsp. curry powder
1 tbsp. hoi sin sauce
1 tbsp. soy sauce
2 tbsps. brown sugar
2 tbsp. vinegar
1 ½ cup tomato passata
a pinch of salt
Method
Heat a pot over medium-high heat. Add olive oil, shallot, garlic, chilli, sesame seeds and curry powder and cook until shallots are golden. Add the remaining ingredients and gently simmer for 20 – 30 min. Blitz with a stick blender and serve.
